Chipotle peppers with salt and coriander seeds. Merquén or Merkén is a Chilean cookery recipe. Originating from the Mapuche Indians of southern Chile and Argentina, merquén consists of a mixture of smoked peppers with salt or salt and coriander seeds. The mixture has an earthy, slightly spicy and smoky flavour, so it's excellent for marinades for meat, lentils and some types of vegetables, such as potatoes. Perfect Serve:
This is one of the ingredients used to make Pebre, a Chilean sauce made with chopped coriander, onion, garlic, tomato and merkén oil, which is often eaten with bread and meat. It's also delicious as a condiment for roast potatoes.
