Following careful selection of the grapes in the vineyard, the harvest was carried out manually into 20 kg boxes, after which the grapes were cooled in a cold chamber to 8-10ºC. Next, they were selected on a sorting table and pressed at low pressure in a pneumatic press. Alcoholic fermentation took place in stainless steel tanks for 18 days, with the temperature controlled at around 15ºC. After alcoholic fermentation, the base wine remained aged in stainless steel, promoting the stirring of fine lees. The second alcoholic fermentation in the bottle began, and the wine continued to age in the bottle with the lees from the second fermentation until the disgorgement stage before commercialization.

Tasting Notes:
Clear, bright, and citrine in color. Aromas marked by prolonged aging with the lees. It presents notes of biscuit, toast, and a slight touch of dried fruit. On the palate, balance and harmony stand out, with fine bubbles and a lively acidity that gives it a certain longevity and freshness.
Store and Serve Advices:
Serve at a temperature of 6ºC to 8ºC.
Food Pairing:
We suggest enjoying it as an aperitif, accompanying appetizers or any fish or white meat dish. It is a sparkling wine of choice to pair with Leitão à Bairrada (Bairrada-style suckling pig). It goes excellently with traditional sweets.
