100% manual harvesting. Crushing with total destemming, followed by pneumatic pressing. Vinification at controlled temperature. Once stabilized it is bottled, fermented again in the bottle for nine months. After "disgorgement" rests for another nine months until it is marketed.

Tasting Notes:
colour clear, with slight nuances of salmon. Intense aroma, with apple and biscuit prominence. Excellent volume, acidity, freshness and balance. The bubbles, extremely thin, result in a delicate and persistent mousse. Nice and amazing end of mouth.
Store and Serve Advices:
It should be served at 6-8ºC.
Food Pairing:
Excellent companion when served at dessert with pies, ice cream or fruit.
