Fresh grapes, harvested at their ideal ripeness, sorted and hand-picked into 20 kg boxes, are transported to the winery, where they undergo careful manual selection. Whole-bunch pressings are performed, and the must is transferred to French oak barrels, where it undergoes its first fermentation and ages for 18 months. After this period, bottle fermentation takes place. The first fermentation was conducted with the yeast Lachancea thermotolerans, known for its bio acidification capacity—the production of high concentrations of lactic acid from fermentable sugars, contributing to the wine's natural acidification. The second fermentation was conducted with the yeast Saccharomyces cerevisiae. In both fermentations, exclusively must from previously raisined grapes was used, providing the wine with natural sugars of the same origin. After the second fermentation in the bottle, the wine was subjected to extreme low temperature conditions, limiting the metabolic activity of the yeasts, resulting in a natural dosage of less than 5 g/L.

Tasting Notes:
light pink wine with copper hues. It has very fine, elegant bubbles. On the palate, it's fresh with lively acidity, leaving a refined, lingering aftertaste. Deep, creamy, and very subtle. Light notes of biscuit and candied red fruit, sophisticated and polished.

Serve at a temperature of 10/12ºC.
