Winemaking:
The grapes are harvested by hand and transported to the winery in 20kg boxes. After going through a manual selection process, the bunches are sent to the press without destemming, where they are gently pressed. After 24 hours of decantation, the must undergoes alcoholic fermentation in stainless steel tanks at 14-16ºC. The base wine is transferred to used French oak barrels where it ages for a period of 5 years until bottling. The second fermentation takes place in the bottle, following the champenoise method. After a further 5 years of ageing in the bottle, the wine, now sparkling, is individually disgorged and is ready for consumption.

Tasting Notes:
sparkling wine of immense intensity and aromatic complexity, revealing all the splendor of evolution combined with a character of great finesse. On the nose, aromas of ripe fruits such as pear and citrus fruits stand out, combined with typical notes of brioche and toasted almonds and even a touch of spices. When tasting, this enormous complexity of flavors is balanced by vibrant acidity and a striking minerality that give it an excellent texture and a very long finish.
Store and Serve Advices:
Serve at a temperature of 8ºC to 10ºC.
Food Pairing:
Pairs well with grilled scallops in a mild sauce. Sautéed asparagus accompanied by a Foie Gras terrine. Grilled fatty fish.
