The Pilot Kamikaze Vin Jaune or yellow wine is a white wine, which aged for 6 years in barrels, without ever being certified. Contact with oxygen led to the development of a white web, called a wedding veil or flower. This web protected the wine against oxidation and prevented the wine from deteriorating. The yeasts that form the veil consume ethanol (alcohol), transforming it into ethanal (acetaldehyde), contributing to the oxidation notes that resemble dried fruits.

Tasting Notes:
Topaz with greenish reflections. Notes of dried fruits, like bitter almond, subtle notes of resin and olives. Very dry, with some bitterness, long and persistent, reminiscent of a Jaune vin from the jura region or a Jerez wine.
Store and Serve Advices:
Store the bottle lying down at a temperature of 15°C. Serving at a temperature from 10-12°C.
Food Pairing:
Great combination with cod dishes or fish dishes in the oven. Also for white meat dishes.
