Winemaking:
After the grapes were carefully selected in the vineyard, they were hand-picked into 20kg boxes and then cooled down to 8-10ºC in a cold room. They are then sorted on a sorting mat and pressed at low pressure in a pneumatic press. Alcoholic fermentation takes place in stainless steel vats over a period of 18 days at a controlled temperature of around 15ºC. After alcoholic fermentation, the base wine is aged in stainless steel vats to remove the fine lees. The second alcoholic fermentation in the bottle began in June, with the lees from the second fermentation remaining in the bottle until the dégorgement that precedes commercialisation. The dégorgement took place in November, giving the wine great complexity as a result of its long years in the bottle.

Tasting Notes:
This wine is clear, bright and citrus-coloured. The aromas are marked by the prolonged ageing with the yeasts. It has notes of biscuit, toast and a slight hint of dried fruit. The palate is balanced and harmonious, with fine bubbles and a lively acidity that gives it a certain longevity and freshness.
Store and Serve Advices:
It should be served chilled (8-10ºC).
