Manual harvest only in the morning. At the entrance to the winery, the best bunches were selected using a sorting table, followed by total destemming and crushing. Fermentation with indigenous yeasts at a controlled temperature of 23ºC-25ºC, with gentle daily delestages, followed by post-fermentation maceration for 3 weeks, for greater extraction of phenolic compounds. The wine aged for 12 months in 1st and 2nd year French oak barrels, after blending it was aged for a further 24 months in used barrels. Before bottling it underwent light filtration.

Tasting Notes:
Deep ruby colour. Intense and concentrated with black fruit and mint, perfectly combined with aromas of spices and toasted wood, resulting from the long aging in barrels. A very structured wine, with a large mouthfeel that is balanced by a unique freshness provided by our terroir. The long aging in barrels has polished its tannins so that they are present but elegant, allowing for an endless finish.
Store and Serve Advices:
It should be served at a temperature of 16ºC to 18ºC.
Food Pairing:
This wine goes well with red meat, roast beef and grilled meats.
