Manual harvest. Upon arrival at the winery, the grapes are destemmed and crushed, and then transferred to conical vats where fermentation begins spontaneously, which normally lasts around 2 to 3 weeks at 26ºC. During this period, in which the wine is in contact with the grapes, two pumping overs are carried out per day. After fermentation is complete, the grapes are pressed and part of the wine is aged in cement vats and the rest in used oak barrels for a year. After bottling, it is aged in the bottle for 6 months.

Tasting Notes:
Bright red, medium intensity. Fruity, slightly vegetal, lively aroma very peculiar to the variety. Fresh, medium-bodied, persistent. Highlights notes of ripe red fruits, raspberries and blackberries.
Store and Serve Advices:
It should be served at 16ºC. Keep the bottles lying down when possible and in a temperature-controlled environment.
Food Pairing:
Grilled fish, cooked seafood, Paellas, grilled red meats, cheese spreads with traditional herbs.
