Product details

Winemaking:
Produced from the batch of vineyards located next to the winery, the harvest was by hand and took place between the end of September and the beginning of October, when the state of maturation was in balance. After harvest, there was a 15-day vinification process in granite lagares with the indigenous yeasts present in the grapes. The wine was bottled after two years and has been in bottles in an acclimatized cellar ever since. Malolactic fermentation took place in stainless steel vats for 5 months, followed by aging in used and new French oak barrels for 15 months.

Store and Serve Advices:
The bottle must be kept horizontally, in a cool, dry environment and protected from light. A wine with enormous longevity, to be drunk without haste at temperatures between 16ºC and 18ºC, over many, many years.

Food Pairing:
A great wine to pair with well-prepared dishes such as tasty oven-roasted lamb, traditional desserts or conventual sweets.
