After the manual harvest, with a careful selection of bunches, fermentation took place in 500-litre new French and Austrian oak barrels, followed by a six-month ‘battonage’ on fine lees and another six-month reductive stage without any intervention. After 12 months of ageing, barrels of both varieties were selected to make up the final blend, and the wine was aged for a further 12 months in the bottle.

Tasting Notes:
It has a good depth of flavour, with a mineral impression that is surrounded by notes of citrus peel (lime, tangerine), fresh flowers and resinous notes. On the palate it's sophisticated, with a perfect balance between freshness, acidity, minerality and a sense of volume, and with a persistent, sweeping finish.
Store and Serve Advices:
Store the bottle lying down at a temperature of 15°C. Serving at a temperature from 10-12°C.
Food Pairing:
Good with seafood, grilled fresh fish and white meats dishes.
