Product details

Winemaking:
Cooling the grapes in a cold room for 24 hours at 10ºC. Manual sorting on a vibrating sorting table. Vacuum pressing of the whole bunches in a slow, gentle cycle. Cold decanting of the must for 48 hours. Fermentation in new 500 litre French oak barrels for 25 days. Ageing for six months on fine lees with periodic batonnages.
