Made with 92% Roupeiro, 5% Roupeiro from 2015 and 3% Rabo de Ovelha from 2011. The bunches pass through the sorting table directly to the pneumatic press where the must is slowly extracted and goes into used barrels where it ferments with commercial yeast without temperature control for about a month. Malolactic fermentation occurs partially spontaneously. In one of the barrels, the development of a flower veil was provided, denying the attestation. Aged for 37 months in new Allier barrels on lees with monthly bâtonnage. It was bottled without filtration or stabilization and aged for 1 year in the bottle.

Tasting Notes:
Bright straw colour, with a shy nose conveying dried rockrose and stone fruit in an iodized frame, in the mouth the volume accompanies a mineral tension and persistence characteristic of toasted bread. Fine, elegant and with character.
Store and Serve Advices:
Keep the bottle lying down at 12ºC. Serve at 12ºC.
Food Pairing:
Meat, lamb and fatty fish dishes in the oven.
