Product details
Manual harvest, in the 2nd week of September. Destemming/crushing and cooling of the grapes in the winery in small open presses, where skin maceration begins and then fermentation. The treading is done manually with wooden pulp to increase greater extraction of the wine characteristics of the grape varieties. After slow fermentation in small open wine presses, the wine is transferred to cement vats and stainless steel tanks, and at this time the two varieties are combined. It rests for a month, when it is filtered to extract the thick lees.
