The grapes arrive at the winery transported in small boxes, and a selection is made, after which they are destemmed, crushed and sent to the granite press, where they are trodden on foot. Crushing is performed in the traditional way. The end of the alcoholic and malolactic fermentation is made without skins, in French oak vats. The wine ages in wood for 16 months, 90% in small-volume barrels and 10% in new French oak barrels. The expression of this vineyard is enhanced by the maturation in barrel, and the barrel allows balancing and fine-tuning all dimensions. After bottling, it ages in bottle for 2 years.

Tasting Notes:
Bright crimson in colour, with bright red reflections, it has a deep and fresh aroma. Then, in a very elegant way, a huge aromatic variety emerges: forest, wet earth, red berries and a mineral sensation of rock. Then comes notes of spices such as green pepper and cloves. In the mouth it is super elegant, silky with strawberries and cherry gaining prominence. Long and structured finish with ripe tannins and extraordinary freshness and vivacity.
Store and Serve Advices:
Serve between 16°C and 18°C. Store the bottle on its side in a cool, dry and dark place.
Food Pairing:
Game meat, with stewed partridge or wild boar. Good for oven-roasted fish such as grouper or sea bass.

The wines from our rarity zone are stored and air-conditioned in the most correct way so that the wine ages correctly in the bottle, but over time, the wine evolves and changes its characteristics.
We recommend that you carefully remove the cork and let the wine air for some time in order to release its natural aromas. Avoid decanting as it can be a very aggressive operation for old wines.
