Harvested by hand into 20kg boxes by friends and locally recruited workers. Selection of the best bunches in the vineyard, complemented in the winery with the aid of a sorting table. Total destemming, conveying the wine masses to the stainless steel fermentation tank, pre-maceration on cold skins, inoculation of selected yeasts, followed by fermentation and long, very careful maceration on skins with temperature control. Brief ageing of months in new French oak casks of the highest quality, followed by 20 long months of anonymity and regular conservation care in stainless steel tanks. Minimum bottle ageing of 6 months before release onto the market.

Tasting Notes:
Ruby-coloured, concentrated. It has retained the grape variety's typical floral matrix and elegant aromas of small black berries. Structured and voluminous with some spice, menthol and balsamic flavours that give it a pleasant freshness at the end of the mouth. Perfect for drinking straight away but excellent for keeping.
Store and Serve Advices:
Ideal serving temperature 16 to 18ºC.
Food Pairing:
A very gastronomic wine, ideal with red meat dishes, game, oven roasts and cheeses.
