The harvest took place in the first week of September. The grape variety harvested was only Encruzado. The grapes were completely destemmed and immediately pressed. The resulting must went into new 250 litre French oak barrels, where it fermented with indigenous yeasts and aged for 6 months. During fermentation, there was a slight fining, as the wine itself was already very fat and complex.

Tasting Notes:
Citrus yellow colour, clear and bright. Aroma of lemon, floral resin (violets). Very complex, slight barrel flavour, soft vanilla. Good structure, with character, the acidity stands out and remains throughout the mouth with a spicy finish (ginger). You can feel the unctuousness of the barrel, but it doesn't leave a mark in the mouth due to the light ageing and permanence on the lees.
Store and Serve Advices:
Serve at a temperature between 10º and 12ºC.
Food Pairing:
Goes well with elaborate dishes, great as a starter, stewed white meats, with fatty fish, shellfish, cheeses with little ageing... ideal with soft cheeses.
