Winemaking:
In the vineyard, the grapes are produced only in vineyards established on the estates of members, in the Borba sub-region. These are inspected and certified as part of an integrated production system before being approved for the Alentejo wines sustainability plan. Grapes are harvested by hand. In the Winery, after total destemming and lightly crushing the grapes, the alcoholic fermentation process takes place in a stainless-steel tank with controlled mechanical treading. The process ends with maceration for 10 days at a controlled temperature of 22-24 ºC. Malolactic fermentation took place in a small stainless-steel vat. A period of 6 months ageing in new French and American oak barrels preceded bottling and the final ageing in an air-conditioned cellar for a further 6 months.

Tasting Notes:
Deep grenade colour. Great aromatic intensity of very mature black fruits. Smooth taste, with freshness, where notes of black fruits, chocolate and coffee predominate. Good depth with persistence.
Store and Serve Advices:
Best served at 16-18ºC.
