Winemaking:
After a very delicate pressing of the grapes, harvested at the end of August, the must fermented for 15 days in steel vats at controlled temperature. The process, following the classic method, started in March and the fermentation took place in the cellar for 25 days at 14 ºC, followed by a period of aging in the bottle with lees for 50 months.

Tasting Notes:
citrus yellow colour. Roasted almonds, toast, dried flowers, butter biscuit, brioche, dried figs, honey, citrus peel and red fruit remnants dominate the aroma of this very rich and complex sparkling wine. It has dry attack and excellent texture and creaminess, also showing a great persistence.
Store and Serve Advices:
Perfect serve between 10 and 12º C.
Food Pairing:
Fish, even with sauces, white meats, cheeses, among many other options.
