Manual sorting is followed by de-stemming and gentle crushing, after which the grapes are transferred to a pneumatic press where they are pressed at low pressure. Fermentation starts in stainless steel vats, but immediately after the start of alcoholic fermentation, part of the musts are transferred to 500 l oak barrels — this greater capacity allows the impact of wood on the aromatic component to be minimized. The aim is to incorporate more ‘fine’ lees with a view to producing wines with greater aromatic complexity and mouthfeel. The musts are kept in contact with the fermentation lees using frequent bâtonnage (three times a week until December, twice a week during spring, then reducing in the final part of the stage), in order to promote the extraction of released compounds, which provide unctuous volume that balances very well with the natural acidity of the Serra de São Mamede grapes. Aged in 100% new French and Hungarian oak barrels, in which the wine aged for 11 months, in a barrel cellar with temperature and humidity control.

We recommend that you carefully remove the cork and let the wine air for some time in order to release its natural aromas. Avoid decanting as it can be a very aggressive operation for old wines.
