Made from a duo of grape varieties mainly made up of Antão Vaz. He is then supported by Rabo de Ovelha. For greater freshness, the harvest was done in two stages. Initially, we harvested the Rabo de Ovelha, leaving the Antão Vaz for later harvest. We want to maintain a profile of greater freshness, combined with greater fruit maturation that Antão Vaz allows us. Fully fermented in stainless steel and at a controlled temperature (14 - 16ºC), we seek to preserve the fruit and maintain its youthfulness. After fermentation, from each of the varieties, both base wines from Antão Vaz and Rabo de Ovelha were racked from the thick lees, and the batch was then made. Kept in stainless steel until bottled after 9 months of conservation in stainless steel.

Tasting Notes:
Visually, it appears light straw yellow, with greenish hints. The aroma has citrus notes (grapefruit, lemon), as well as notes of more mature fruit (melon, peach). Clean aroma with good exuberance and intensity. In the mouth, it has an excellent balance, presenting lively acidity and a medium, linear mouth volume. It is rich, textured, finishes long and pleasant.
Store and Serve Advices:
It should be served at a temperature of 10-12º.
Food Pairing:
Given its freshness and volume in the mouth, it is a good partner for: Grilled fish or solid salads with a base of pasta and/or white meat – such as Cesar Salad. Another more regional option is dogfish soup! It will be a good partner for barbecues with various meats. Pastas and pizzas also suit this profile well.
