Manual harvest, selection on a sorting table, direct press, 12-hour cold decantation, spontaneous fermentation. The first presses in stainless steel in a horizontal tank (60%) and the 2nd presses in French oak barrels with a minimum of 3 years of use (40%). Sulfurous applied only after fermentation. Aging for 18 months on lees without bâtonnage.

Tasting Notes:
Citrus yellow colour with touches of straw, aroma of iodine, salt, linden, cherry. In the mouth, a dense, very concentrated attack, vibrant acidity that remains until the end of the taste. Then, salt, salt, salt and iodine, it is a wine that could only have been born at sea.
Store and Serve Advices:
Store at 6-8ºC, to be served at 10ºC, and drunk at 12ºC.
Food Pairing:
A wine born at sea, ready to pair with shellfish, savory fish (red mullet, sea roe, sea urchins) but with a density and concentration to work with white meats with burnt fat, like a good suckling pig or even a pork belly.
