Product details

Winemaking:
Selective manual harvest in 20Kg baskets, whole bunch pressing, without SO2 until the end of fermentation. Transfer after 12h. Spontaneous fermentation in horizontal vats of 600-1000L. Aging in Solera mode for 4 years.

Tasting Notes:
Clean straw yellow colour. Intense tertiary aroma, but at the same time mineral. Presence of iodine, honeycomb, citrus. Tense attack, very textured, complex, and intense. With minerality and acidity present.

Store and Serve Advices:
Store at 6-8ºC, to be served at 10ºC, and drunk at 12ºC.

Food Pairing:
More iodized and complex profile, while still being fresh and mineral, ideal partner for seafood rice, bread soup, fish broth, and stew.
