Aged for 3 years on lees in stainless steel tanks with stirring once a week before bottling and the addition of Liqueur de Tirage. Second fermentation in the bottle for 9 months on lees before disgorgement.

Tasting Notes:
Fine, delicate bubbles and a vibrant acidity lead to hints of wild berries and fruits; a touch of meringue evokes summer desserts (Eton Mess!). Drier, more complex notes of flowers, dried roses, and hay lead to a long, attractive, and dry finish.
Store and Serve Advices:
Bottle laid on its side at an ambient temperature of 12ºC and humidity of 60%.
Food Pairing:
Serve chilled, as an appetizer or to accompany fish, seafood, sushi or desserts.
