Light pressing, using only the first run-off from the press. Cold decanting, alcoholic fermentation at 14-15ºC for 15 days. After this, it remained in batonnage on fine lees for 6 months. Inoculated and fermented in the bottle using the classic sparkling wine method. Bottle ageing on the lees for 45 months.

Tasting Notes:
The colour shows some evolution towards a golden yellow, but it is bright and attractive, visually complemented by very fine and persistent bubbles. Good aromatic intensity but delicate and with great freshness, notes of white fruit and slight brioche, some dried fruit, giving a good aromatic richness. Dry wine with good acidity, good structure and at the same time creamy due to its long ageing on fine lees, good involvement of the ‘mousse’, all in great balance ending in a smooth and prolonged finish.
Store and Serve Advices:
Serving temperature at 8ºC to 10ºC.
Food Pairing:
As an aperitif or to accompany natural seafood dishes. Perfect with sushi and salads.
