After hand-harvesting and careful bunch selection, the destemmed grapes fermented at a controlled temperature in a 5,000-liter French oak vats. The wine then aged for an additional 18 months in used 500-liter French and Austrian oak barrels. The barrels were filled to two-thirds of their capacity to create the conditions for biological development in true Sherry style, with the “véu de flor", formed by yeasts that develop spontaneously on the surface of the wines.

wine of great expression, ruby/violet in colour, light and captivating. The nose expresses Pinot Noir and suggests sweet floral notes in harmony with ripe cherry and strawberry fruitiness. All of this aligns with a fine, oxidative, and smoky profile from the aging process. On the palate, it is dry, balanced, and complex, with a striking and very sophisticated flavour, an explosion of red fruit that transports us to a sensation of almost saltiness and a pleasant and subtle bitterness in the finish. A disconcerting Alentejo wine, a true "Pinote no Ar."

Serve at 14ºC.
Food Pairing:
Born in the Alentejo, delicate but with a strong personality, this disconcerting red wine is certainly a good companion to a table of ham tapas, a selection of cheeses and sausages, or a good sushi dinner.
