Winemaking:
The grapes are harvested by hand and transported to the winery in small boxes. This is followed by complete destemming, crushing, pressing and decanting in cold stainless steel tanks. The completely clean must is then transferred to other stainless steel tanks where it will ferment at a controlled temperature of around 15°C until all the sugars are gone. Once the alcoholic fermentation is complete, the wine is sulphited. A few days later it is transferred to another stainless steel tank and remains there for a few months. When preparing for bottling, it only undergoes a light fining with mineral agents and then filtration immediately before filling the bottles in order to preserve all of its aromatic potential.

Tasting Notes:
It has a colour with citrus and slightly golden nuances. Fresh aromas, with floral, citrus and mineral notes. In the mouth it is fresh, with good acidity and some body, combined with a fruity and slightly salty taste.
Store and Serve Advices:
Serve at 8-10°C.
Food Pairing:
It can accompany different types of dishes, such as seafood, all fish dishes or even meat dishes with leaves.
