Product details
The grapes are harvested by hand and transported to the winery in small boxes. This is followed by complete destemming, cold crushing, draining in a press and decanting in stainless steel tanks at a low temperature. The completely clean must is then transferred to other stainless steel tanks where it will ferment at a controlled temperature of around 15°C until all the sugars are gone. A few days later, it is transferred to another stainless steel tank and remains there for a few months with a slight "bâtonnage" on fine lees. When preparing for bottling, it only undergoes a light fining with mineral agents and then filtration immediately before filling the bottles in order to preserve all the aromatic potential, being a product with only natural stabilisation.
