Winemaking:
At the optimal point of ripeness, the harvest takes place at night to preserve as much as possible the aromatic properties of the grape varieties that make up this blend: 85% Verdelho and 15% Sauvignon Blanc. In the winery, the grapes undergo a short skin maceration, intensifying the aromatic extraction and complexity of the must, before being gently pressed at low pressure. The Verdelho fermentation takes place in stainless steel tanks at controlled temperatures, and at 1/3 of the alcoholic fermentation, part of the batch is transferred to 500L French oak barrels, where it subsequently ages for about four months. The Sauvignon Blanc ferments entirely in 500L barrels, where it also ages. During the aging period, weekly bâtonnage is carried out, giving more texture and complexity to the wine. The final blend is defined and stabilized about a month before bottling.

Tasting Notes:
Pale lime green, clear and bright appearance. Good aromatic intensity with floral notes and slight hints of tropical fruit. The well-integrated wood contributes light toasty aromas that give it complexity. On the palate, it presents a good structure and a subtle touch of wood, giving it elegance and harmony. It finishes with a long and fresh aftertaste.
Store and Serve Advices:
Serve at a temperature between 10 and 12ºC. Store upright in a cool, dry place away from light. Consume within 5 years of bottling.
Food Pairing:
Ideal to accompany seafood dishes such as grilled fish, shellfish, and fresh salads with, for example, salmon or burrata.
