Product details

Winemaking:
This “Rosé de Macération” consists of leaving the grape must in contact with the skins for a short period (10-12 hours to obtain a great expression of aromas). The natural pigments in the Berry skin begin to color the juice and at the same time bleed. Baga vines are on average 80 years old and are planted like roses. All located on slopes with limestone soils and facing east to capture only the morning sun. The valleys of these vineyards are located in the heart of Bairrada, halfway between the Atlantic Ocean and the mountains, next to the local river Certima. Bleeding is performed when the aromas of the red fruits are adequately extracted, well integrated and in balance with the must. Spontaneous fermentation with indigenous yeasts. Vinification on fine lees in traditional barrels (5-500L). Malolactic fermentation.
