The grapes are completely destemmed and pressed, using only the exhausted must. This is followed by cold static decanting for 24 hours, after which the must is separated from the lees. Fermentation begins at a controlled temperature of 14ºC. After the end of alcoholic fermentation, the wine is aged on the fine lees for 2 months. The method used to prepare the sparkling wine is the Classic Method, with the second fermentation in the bottle. After preparing the base wine, tirage liqueur is added and then bottling takes place. Sparkling wine is then fermented at 12ºC in the cellar. This is followed by ageing, which takes as long as necessary to reach the desired level of quality. Before commercialisation, the wine is racked and disgorged, and the process ends with the addition of the expedition liqueur selected for each vintage.

It has a beautiful golden colour, with very fine bubbles that give it an elegant and regular shine. The palate is elegant and voluminous, with an intense, crunchy mousse. Creamy and enveloping on the palate with very balanced acidity that gives it a long, velvety finish. On the nose it reveals complex and intense aromas, with notes of citrus fruit balanced by ripe white fruit, which blend delicately with floral nuances and soft toasted and brioche notes.
Store and Serve Advices:
Recommended tasting temperature is between 6 and 8 °C.
Food Pairing:
Excellent as an aperitif, to accompany light meals, foie gras, seafood, grilled white fish, as well as roasts and desserts.
