Winemaking:
Manual harvest. Total destemming. Decanting at low temperature for 24 hours. The first fermentation took place in stainless steel tanks. Battonage for 3 months. The second fermentation took place according to the traditional method in the bottle, in a cool cellar for 28 months.

Tasting Notes:
Intense salmon colour. Slightly floral aroma, with notes of petals, exotic fruit (lychee) and hibiscus. Medium bubble, medium body and medium-low pressure with lots of flavour and freshness, crunchy acidity, in a lively and cheerful whole with lots of personality.
Store and Serve Advices:
Serve at a temperature of 8 °C.
Food Pairing:
Good as an aperitif or with white meats and fish dishes.
