Winemaking:
Harvested by hand into 20kg boxes. After total destemming, the grapes are foot trodden in a press for three days with cold pre-fermentation maceration. Fermentation takes place in stainless steel vats at a controlled temperature of 24-26ºC, with long post-fermentation maceration, followed by pressing in wooden baskets with a vertical hydraulic press. Aged for 12 months in a selection of the best new 300 litre Portuguese oak barrels, followed by a minimum of 3 years in the bottle.

Tasting Notes:
Intense ruby colour. Aromas of blue fruit, black plum, some spice such as black pepper and nutmeg, hints of black tea and some floral notes. On the palate it's quite full-bodied, dry, with excellent tannin structure, very well integrated wood, balanced by intense and long-lasting minerality and freshness, and high acidity that lingers in the aftertaste.
Store and Serve Advices:
Serve at a temperature of 16ºC-18ºC.
Food Pairing:
Ideal with red meat and strong cheeses.
