After total destemming, the grapes were foot trodden in a marble press for 48 hours in order to maximise pre-fermentation skin contact. Fermentation took place in 10 new 500 litre French oak spin barrels, followed by two weeks of tanning. The wine was aged for 24 months in new 225 litre French oak barrels.

Tasting Notes:
Clear, garnet-coloured wine. Aromas of spice, cocoa and liquorice. On the palate it is complex and intense with an elegant and persistent finish, revealing its ageing potential.
Store and Serve Advices:
Consume up to 20 to 30 years if kept in a cool, dark place with the bottle lying flat. It should be served at a temperature of 16ºC. Decanting is recommended.

Pairs with red meats, game, intense cheeses and sausages.
