The grapes were harvested and vinified separately by variety. They were unloaded from the 20kg boxes onto the sorting table, passing through the destemmer-crusher and into the small stainless steel vats. Before the alcoholic fermentation, the Alfrocheiro and the Field Blend were in cold pre-fermentation maceration for 4 days. The alcoholic fermentation lasted 10 days at an average temperature of 28ºC, with all the grape varieties remaining in post-fermentation maceration for 10 days. Malolactic fermentation took place in new and used barrels. All the wines were aged for 30 months in new and used French oak barrels of 225L, 500L and 1000L. The final blend is the result of a selection of the best barrels from the three types of wine. After bottling, the wine spent 18 months in the bottle before being commercialised.

Tasting Notes:
The essence of Quinta dos Carvalhais is expressed in the aromas of this wine: notes of pine, eucalyptus, cedar and oak, black and wild fruit, resinous and shrubby nuances, moss, pine wood, some soft flowers and a very fresh menthol touch. It's a dense wine on the palate, with firm, defined but polished tannins and an elegant, enveloping body. The aromatic complexity is confirmed in the mouth. The wine ends with a voluminous, delicate, long and persistent finish.
Store and Serve Advices:
Serve at a temperature of between 16ºC-17ºC and decant after 4/5 years of age. Wide glasses should be used. Once the bottle has been opened, it should be consumed the same day, although it can remain in good condition for some time, as long as it is well corked, and ideally with some vacuum.
Food Pairing:
It's a wine that invites you to the table, it's very gastronomic. The wine's elegance and freshness make it versatile, and it can accompany octopus à lagareiro, oven-roasted pork neck or even rice with ribs.

The wines from our rarity zone are stored and air-conditioned in the most correct way so that the wine ages correctly in the bottle, but over time, the wine evolves and changes its characteristics.
We recommend that you carefully remove the cork and let the wine air for some time in order to release its natural aromas. Avoid decanting as it can be a very aggressive operation for old wines.
