Winemaking:
Total stalking for 1 old task. Fermentation occurred spontaneously in contact with the masses and lasted around 15 days during which the blanket was slightly submerged in order to control the extraction well. It was "opened" on Saint Martin's Day and left to drain in the press without pressing. It was placed in a Always Full bottle with fine lees, which was raised once a month, until bottling. The wine was not subjected to any filtration and stabilization process, and was deliberately cloudy.

Tasting Notes:
Yellow colour, typical of tanning. Wine with suspended particles, the result of non-filtration. Fresher stone fruit, with vegetal notes. Long in the mouth, with the consistency of contact with the masses and concentration of the grape itself. Notes of clay, light oxidative notes and white fruit. The balance between acidity and concentration are the basis of this wine, where it is possible to have the perception of a carving made with aging on fine lees, giving it a very captivating depth and complexity.
Store and Serve Advices:
Store in a dark and cool place (12º C to 14º C), in a horizontal position with minimal vibration. Serve at a temperature of 12º C.
Food Pairing:
Pairs with soft cheeses, fatty fish, swordfish fillets and white meats.
