Manual harvesting into 12kg boxes in the early hours of the morning. Cooling of the grapes in a cold room for 24 hours to 10ºC. Manual sorting on a vibrating sorting table, followed by destemming and light crushing. Tanning for 48 hours in a stainless steel press at 16ºC. Individual fermentation of each variety in new 500 litre French oak barrels in a temperature-controlled cellar. After alcoholic fermentation, it was aged for 8 months on the fine lees (sur lies) with periodic batonnages. Aged for 18 months in bottle.

Tasting Notes:
Greenish-yellow colour. Very rich aroma, with ripe fruit, mineral matrix and wood smoke in the background. The palate is remarkably precise, with excellent volume, tension, structure and acidity that will allow it to develop well in the bottle.
Store and Serve Advices:
The ideal service temperature is between 10ºC to 12ºC.
Food Pairing:
Ideal with rich fish and seafood dishes. It goes perfectly with various cod dishes and soft cheeses.
