Total destemming and soft pressing, spontaneous fermentation in a used 400 L French oak barrel. Aging for 6 months in oak barrel with weekly bâtonnage.

Tasting Notes:
Excellent acidity, typical of the variety, combined with the creaminess that comes from the bâtonnage. Citrus aroma, green apple, with some minerality. A slight smoky note adds another complexity to the wine.
Store and Serve Advices:
It is recommended to be consumed at 12ºC. Keep the bottle in horizontal position. This wine will benefit from the time in bottle.
Food Pairing:
Its lightness is ideal to accompany fish, seafood, salads, sushi and pasta.
