Winemaking:
Total stalking for 2 old carvings. Fermentation occurred spontaneously in contact with the masses and lasted around 15 days during which the blanket was slightly submerged in order to control the extraction. They were "opened" on Saint Martin's Day, November 11th. Blending, aging and bottling followed. The wine was not subjected to any stabilization process.

Tasting Notes:
Yellow colour, typical of tanning. Ripe stone fruit, with notes of dried vegetable. Long in the mouth, with the consistency of contact with the masses and concentration of the grape itself. Notes of clay, light oxidative notes and white fruit. The acidity is notable, very typical of traditional winemaking, where the volatile acidity reaches higher levels, giving balance to the wines from this warmer region.
Store and Serve Advices:
Store in a dark and cool place (12º C to 14º C), in a horizontal position with minimal vibration. Serve at a temperature of 12º C.
Food Pairing:
Pairs with soft cheeses, fatty fish, swordfish fillets and white meats.

Contains sulphites.
