From the best plots of Quinta da Carregosa, the grapes were harvested manually in the plots that showed a more balanced maturation. After careful manual selection and harvesting, the grapes are subjected to crushing and total stemming. This is followed by a period of 48 hours of skin maceration at 10ºC to maximize the action of the grape enzymes responsible for extracting aromas. Selected yeasts are used to induce alcoholic fermentation, which takes place between 12ºC and 15ºC for a minimum of 30 days.

Tasting Notes:
Citrine yellow. Intense fruity aroma of tropical fruits, white-fleshed fruit, apricot and vanilla. Elegant structure well balanced with a fresh acidity; finishes long fresh and mineral.
Store and Serve Advices:
Service temperature between 8 and 12⁰C. Store in a dry, cool place away from light.
Food Pairing:
Of remarkable scope, with the ability to combine perfectly with appetizers, salads, rice and fish. It has a very cordial relationship with tomatoes, which contain acidic and striking elements and are ideal to accompany pasta, pizza, salads or tomato-based dishes.
