Vinification between the 1st and 2nd week of September. The grapes immediately at the reception are protected against oxidation, then streaked out to the pneumatic press where they are gently pressed. The must is left 24 hours in decanting, when it reaches the desired turbidity and then it's separated from the lees that have been formed, this cleaned must is fermented with the inoculation of selected yeasts. The fermentation takes place during 15 days, always with the controlled temperature to not exceed 14ºc. After alcoholic fermentation, the lots are stacked in stainless steel vats to better preserve their freshness and fruitiness and a small part in French oak barrels to increase the complexity. After that the wine is stabilized and filtered, followed by the bottling and subsequent stage of 3 months in the bottle.

Tasting Notes:
Citrus yellow colour, with greenish lavas. Very elegant fruity aroma, well combined with mineral notes and vegetable nuances that give great freshness. In the mouth it has a lively acidity and great harmony between all the aromas, in a wine of average body, very elegant and long in the end of mouth.
Store and Serve Advices:
Store the bottle lying down at a temperature of 15°C. Serving at a temperature from 10-11°C.

Should accompany any kind of meal, including desserts.
