From the best plots of Quinta da Carregosa, the grapes were harvested manually in the plots that showed the most balanced maturation. After careful selection and manual harvesting, the grapes are subjected to crushing and total stemming. This is followed by a period of 48 hours of skin maceration at 10ºC to maximize the action of the grape enzymes responsible for extracting aromas. Cold defecation at 7°C for 48 hours. Selected yeasts are used to induce alcoholic fermentation that occurs between 12ºC and 15ºC for at least 30 days. The wine was transferred to new French oak barrels where it remained for 9 months. After bottling, the wine aged in bottles for 2 months before being sold.

Tasting Notes:
Straw yellow color with greenish reflections. Intense fruity aroma of yellow fruit, quince, grapefruit, lemon. Elegant structure well balanced with a fresh acidity; finishes long fresh and mineral.
Store and Serve Advices:
Serve at a temperature between 8ºC and 10ºC.
Food Pairing:
Pairs well with grilled sea bass and sea bream with boiled potatoes, monkfish rice with prawns, grilled turkey steak with mushroom sauce.
