Fresh grapes at their ideal ripening point, picked by hand into 20kg boxes. After de-stemming and gentle crushing, the grapes were placed in a stainless steel tank and macerated on the skin for five days. These fermented for five days, with three "delestages" per day, remaining in post-watering maceration for another three days. The result was a wine with excellent extract. This aged in old French oak vats. The Blend was made in May 2005.

Tasting Notes:
Deep purple red. It presents, on the nose, an attractive bottle aging. Notes of ripe fruit with spices. Good aromatic quality. Touch the violets. Warm plum and cherry compote in the mouth, supported by a good body. Smooth, satiny texture. A subtle and elegant wine, showing itself and evolving very well.
Store and Serve Advices:
Laying down in a cool, dry place, away from light. Long evolution potential, subject to deposit formation. Serve decanted, between 13º and 16º.
Food Pairing:
Excellent with fatty cheeses and dark chocolate-based desserts.
