Manual harvesting. Destemming, crushing and pressing with maximum oxygen protection. Decantation in vat - 8ºC for 48 hours. Fermentation in a stainless steel vat with controlled temperature between 12ºC - 14ºC for 20 days. Stage in stainless steel vat.
