Product details

Winemaking:
On arrival at the Quinta dos Carvalhais winery the grapes were destemmed and softly crushed. The must, protected from oxidation, was subjected to static decantation at a low temperature for 24 hours, so as to reach the required level of clarity. The different grape varieties were vinified separately, in stainless steel tanks at a controlled temperature of 16ºC. Fermentation thus lasted about 20 days. It was bottled after a period of maturation for about four months in stainless steel tanks. After the final blend was prepared the wine underwent the necessary treatments and was bottled.

Store and Serve Advices:
One of the main characteristics of fine Dão white wines is their longevity: although in its first two years this wine shows a remarkable freshness that will be appreciated by those who prefers youthful white wines, it has a very positive development thereafter, gaining in complexity. The bottle should be kept horizontally, in a dry and cool place, shielded from intense light. It should be served chilled, between 8ºC-10ºC. Once open the wine reacts well to oxidation and may therefore be kept in a refrigerator for 1 to 2 days without compromising its quality.

Food Pairing:
Fresh, elegant and versatile, it is an excellent choice to go with a great variety of fish or sea-food dishes, as well as salads, pasta and all types of poultry. However, it is also a pleasing aperitif.
