After a careful selection and manual harvest, the grapes are subjected to crushing and total destemming. A 24-hour period of pre-fermentative maceration at 30 ° C is followed to maximize the performance of the grape enzymes responsible for the extraction of colour and aromas. Selected yeasts are used to induce the alcoholic fermentation that takes place between 22ºC and 24ºC for a minimum of 10 days. Malolactic fermentation induced with temperature control. Once the malolactic fermentation induced by direct inoculation was completed, the wine was transferred to new French and American oak barrels where it remained for 6 months. After bottling, the wine still aged for 6 months in the bottle.

Tasting Notes:
Red colour very closed, with indigo reflection. It reveals an aromatic intensity dominated by the mature blueberry, with balsamic notes so characteristic of the vineyards of the Távora banks. The well-integrated wood increases the complexity of the tasting. In the mouth it is very elegant, full of structure, with round tannins. The ending is long and persistent.
Store and Serve Advices:
Store the bottle lying down at a temperature of 15°C. Serve at a temperature of 16°C to 17ºC.
Food Pairing:
Best with game, bean and sausages stews and grilled red meats.
