Bunches with approximately half of the berries damaged by bortitis (noble rot), some dehydrated berries, and a few still intact but overripe. Careful manual harvesting into 20 kg perforated boxes, sorting table, long maceration without destemming or crushing in a press. Long alcoholic fermentation in stainless steel tanks with temperature control. Prolonged aging in contact with fine lees. Total aging of 24 months in stainless steel before bottling.

Tasting Notes:
It presents a beautiful, bright golden color and extraordinary aromatic complexity. Initially, very light and delicate aromas of pure rosemary honey and tea leaf, soon followed by aromas of sultana raisins, light dried apricot, and crystallized white fruits. On the palate, it is moderately unctuous, with sweetness and acidity in perfect balance and hints of citrus aromas of tangerine, grapefruit, lime, orange leaf, and blossom. It finishes fresh, with a slight saline sensation on the lips, leaving you wanting more.
Store and Serve Advices:
Serve at 8-10ºC.
Food Pairing:
It should be enjoyed simply; we suggest the classic pairing with foie gras, a good pâté, thin slices of quality galantine, dried fruits, sweet and savory treats wrapped in puff pastry, or even a very thin slice of blue cheese.
