The late harvest of selected grapes, affected by grey rot, takes place in mid-October. The bunches are destemmed and crushed before undergoing cold maceration for three days. After pressing, the must is transferred to barrels where it ferments slowly until winter. Aging in used French oak barrels for 9 months.

With a golden amber colour, the nose presents notes of juicy limes, honeycomb, apricot jam and marmalade, and salted pistachios. The palate is balanced, with fantastic acidity and a beautiful salinity resulting from our cool coastal climate.
Store and Serve Advices:
Serve between 7ºC and 9ºC.
Food Pairing:
Ideal as an appetizer, it pairs well with dried fruit.
