As a result of the year's climatic conditions, this late harvest is a wine obtained from 100% Botrytised grapes. The harvest was done in several passes, each time harvesting only the bunches whose degree of dehydration was the desired one. Made individually per variety, on cold October mornings, in 5 passes through the plots of both varieties. The grapes were pressed whole in a vertical press and each day of harvest was vinified separately. Fermentation was stopped when the ideal balance between alcoholic strength, sweetness and acidity was found. The batch was made after fermentation and aging took place in used oak barrels for 12 months. Subsequently, the wine aged for one year in the bottle.

Tasting Notes:
It has a golden color. On the nose, it has an intense aroma of great complexity that evolves over time. Initially, the aromas of honey stand out, to evolve into bitter orange jam, ending with a fresher and more chemical character of fresh cider. Wood does not make itself known by providing complexity in a perfusion of different aromas.
Store and Serve Advices:
As an aperitif serve at a temperature of 10ºC; As a dessert wine serve at 16ºC.
Food Pairing:
Perfect to pair with pate and foie gras. It is also the perfect pair for desserts.
