Product details

Winemaking:
Grapes were hand-harvested and transported to the winery in 25kg boxes. The boxes were separated from the best parcels and the best bunches were manually selected. Destemming followed, and the best grapes were gravity-fed to stainless steel vats at 10°C. Fermentation began spontaneously with native yeasts and minimal intervention. A long maceration followed, and at a density of 1020, the wine was destemmed. Using a vertical press, the grapes were lightly pressed, and alcoholic fermentation was completed in the stainless steel tank. Malolactic fermentation was carried out in the same stainless steel tank. 50% aged for 8 months in stainless steel tanks and the remainder in new French oak barrels.
